11. Our manna and business

From a point of view commercial, the manna is diversified into four categories based on the method of collection and therefore the percentage of impurities present.
Here are listed in order of quality:

• Manna ash cannolo:it is recognizable because it has a white color, a stalactite shape and a size of at least 3 centimeters. It does not contain impurities;
• Grocery ash manna:it is a manna that contains 2% impurities and a humidity equal to 4%;
• Manna ash"Pollina"type processing:it is a manna that contains 3% impurities and a humidity of 7%;
• "Castelbuono"type ash manna:it is a manna that contains 4% impurities and 7% humidity.
