Color : dark ruby red, almost impenetrable which makes the color almost consistent.
Smell : elegant, powerful, austere is told with various aromas of green pepper and then balsamic with hints of thyme, juniper, mallow to continue between a harmony of vanilla, coffee, white chocolate, cocoa, licorice and an unexpected floral complicity of violet and rose hip.
Taste : wine of great personality, powerful, austere, long. It is pulpy, dense with fruit and elegant with dense and refined perfectly smooth tannins, its structure set with a territorial freshness makes it almost timeless. Production technique : Traditional red vinification in concrete and wooden vats. Spontaneous fermentation with indigenous yeasts with controlled temperature (max 25C) for 20 days, long maceration on the skins for up to 30 days..
Maturation : For 2 months in concrete tanks, for 24 months in new French Allier oak barriques and tonneaux, 12 months in bottle.
