Production technique : Traditional red vinification in concrete and wooden vats. Spontaneous fermentation with indigenous yeasts with controlled temperature (max 25C) for 20 days, long maceration on the skins for up to 30 days..
Maturation : For 2 months in concrete tanks, for 24 months in new French Allier oak barriques and tonneaux, 12 months in bottle.
