Grated tuna bottarga
This precious Bottarga is obtained thanks to the artisanal processing of tuna eggs:properly rinsed and salted with sea salt, they are then hung to dry for 30/40 days in the sea air and in the Sicilian sun. The goodness of this natural food essentially depends on the quality of the raw material, the balance of the hand that rises and the delicacy of drying.
