Caciocavallo of the Madonie
The Madonie caciocavallo is the result of the ancient Madonite dairy art.
The dairy techniques handed down from father to son, allow our tasty caciocavallo, to find the taste of the past.
Spun paste cheese , pear-shaped with rounded pascio with smooth and curved faces, has a short neck with a rounded head.
It has a very soft and compact white tending to straw-yellow paste and a sweet and delicate flavor .
