The eggplant caponata is a universally known sweet and sour dish, exclusive of the Sicilian gastronomic tradition.
The frying of the aubergines in sunflower oil, the presence of capers, olives, pieces of celery, onion and the sweet and sour taste of the sauce excellently enhance the taste of this dish.
For many years it has been included in the list of traditional Italian food products of the Ministry of Agriculture, Food and Forestry.
