Salame S.Angelo PGI is a sausage of pure coarse pork meat, for the production of which only the noble parts (hams, fillets, loins, necks, shoulders, bellies) of Large Wait, Landrace, Duroc breeds are used , well shaped by live weight
over 160kg. It is stuffed into natural pork casings and aged for a minimum period of 30 days for the sottocularino and 50 days for the cularino.
