Chickpeas are an excellent source of protein and fiber. for the preparation of soups, soups, but also for fresh summer salads.
It is recommended to soak the dried chickpeas in cold water for at least 12 hours, adding a teaspoon of baking soda.
For optimal cooking you need at least 60 min. from the beginning of boiling, if cooking takes place in a pressure cooker the times are halved. To help tenderize the peel, add salt at the end of cooking; while to avoid intestinal swelling, use bay leaf or fennel during preparation.
