The sfoglio delle Madonie is the most typical dessert from Polizzano and boasts over four hundred years of history.
It is a shortcrust pastry filled with tuma (mountain cheese), pumpkin, egg whites, chocolate, sugar and cinnamon, baked in the oven and served cold.
The Madonie sfoglio is produced by the Di Gangi pastry shop in Castellana Sicula, renowned for its superior quality, the result of the ancient recipe of the grandmother of the current pastry chefs, Donna Concettina Arminisa.
Ingredients:FLOUR, sugar, lard, EGGS, marsala, MILK, yeast, CINNAMON, flavorings.
Filling:SHEEP TUMA, sugar, pumpkin, ALBUME, chocolate, CINNAMON.
