This is a variety of SOFT wheat once grown throughout Sicily. It is distinguished by a high protein content. Extremely digestible, even in subjects with gluten sensitivity, due to its low gluten content.

From its characteristically white grain, a high quality soft white flour is obtained with excellent bread-making characteristics, especially for desserts.

USE: 

Suitable mainly for SWEETS. Used in a mixture with durum wheat, for a better yield of baked products.
